Ingredients

  • 6 strips thick-cut bacon, chopped into 1-inch pieces
  • 4 large eggs, room temperature
  • 2 cups fresh baby spinach, roughly chopped
  • 1/4 cup half-and-half or heavy cream
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/4 tsp sea salt (adjust to taste)
  • 1/4 tsp black pepper, freshly ground
  • 1/4 tsp smoked paprika
  • 2 tbsp fresh chives or parsley, chopped
  • 1 tbsp unsalted butter
  • 2 tbsp parmesan cheese, freshly grated (optional)

Instructions

    Cook chopped bacon in a large cast iron skillet over medium heat, stirring occasionally, until crispy, about 6-8 minutes. Use a slotted spoon to transfer bacon to a paper towel-lined plate. Reserve 1 tbsp of bacon drippings in the pan.

    Add butter to the skillet with the bacon drippings. Let it melt and foam.

    Crack eggs into a bowl. Add half-and-half, salt, pepper, and smoked paprika. Whisk vigorously until fully combined and slightly frothy.

    Pour egg mixture into the hot skillet. Let sit undisturbed for 20 seconds to begin setting on the bottom.

    Using a spatula, gently push eggs from the edges toward the center in slow, sweeping motions. Rotate the pan as needed for even cooking. Continue until eggs are just barely set — they should look soft and slightly wet.

    Remove skillet from heat. Add cherry tomatoes, red onion, and garlic. Toss gently — residual heat will cook the tomatoes slightly and warm the onion without losing their texture.

    Add spinach and fold it in. The heat will wilt it gently. If spinach doesn't wilt fully, return to low heat for 30 seconds.

    Return crispy bacon to the skillet. Fold everything together gently.

    Divide between plates. Top with fresh chives, parsley, and grated parmesan if using. Serve immediately.
