Ingredients

  • 1 lb baby potatoes, cubed
  • 2 medium carrots, sliced
  • 8 oz green beans, trimmed
  • 12 oz leftover Easter ham, cubed
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste

Instructions

    Preheat oven to 400°F (200°C).

    Spread potatoes and carrots on a sheet pan. Drizzle with 1 tbsp olive oil, season with salt and pepper. Roast for 15 minutes.

    Mix honey, Dijon mustard and garlic powder in a small bowl.

    Add green beans and ham to the pan. Drizzle with honey-mustard glaze and remaining olive oil. Toss everything together.

    Roast another 15-20 minutes until potatoes are golden and green beans are tender-crisp.

    Serve hot directly from the pan.
