Ingredients

  • 4 precooked chicken sausages (apple or sundried tomato flavor), sliced into 1/2-inch rounds
  • 2 medium apples, cored and cut into wedges (Honeycrisp or Fuji work great)
  • 1 medium red onion, cut into wedges
  • 1/2 cup walnuts, roughly chopped
  • 1 tbsp maple syrup
  • 1 tbsp grainy Dijon mustard
  • 1 tbsp olive oil
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • Fresh thyme sprigs (optional)

Instructions

    Preheat oven to 200C/180C fan/gas 6 (400F/350F fan).

    Arrange sausage rounds, apple wedges, and red onion wedges on a large baking sheet. Toss with olive oil, salt, and pepper.

    Roast for 10 minutes, until apples begin to soften and sausages start to caramelize.

    Remove from oven. Drizzle maple syrup and dot grainy mustard over everything. Toss gently.

    Scatter walnuts over the pan and return to oven for 5 more minutes.

    Serve immediately, garnished with fresh thyme if desired.
