  • 1/4 cup sun-dried tomatoes, chopped

  • 1/4 tsp garlic powder
  • 1/4 tsp sea salt (adjust to taste)
  • 1/8 tsp black pepper, freshly ground
  • 1/4 tsp red pepper flakes (optional)
  • 1 tbsp fresh dill, chopped (or 1 tsp dried dill)
  • 2 tbsp fresh parsley, chopped
  • Crusty bread or pita for serving

    Crack eggs into a bowl. Add cream, salt, pepper, garlic powder, and red pepper flakes. Whisk vigorously for 30 seconds until fully combined and slightly frothy.

    Add spinach to the dry pan first (no water needed). Stir and cook for 1-2 minutes until wilted. Use a spatula to press out any excess moisture.
