Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with aluminum foil and lightly grease.
Pat salmon fillets dry with paper towels. Place skin-side down on the prepared sheet pan.
In a small bowl, whisk together maple syrup, Dijon mustard, whole grain mustard, garlic, lemon juice, smoked paprika, salt, and pepper until smooth.
Brush the maple mustard glaze generously over the top and sides of each salmon fillet.
Drizzle salmon with olive oil. Scatter thyme leaves over the fillets.
Roast for 12-15 minutes until salmon flakes easily with a fork and has reached an internal temperature of 125°F.
Switch to broil for the last 2 minutes to caramelize the glaze — watch closely so it doesn't burn.
Remove from oven. Let rest for 2 minutes.
Garnish with fresh thyme sprigs and lemon slices. Serve immediately with the caramelized glaze from the pan.
Real maple syrup makes a noticeable difference — avoid pancake syrup which is too sweet and artificial.
Line the sheet pan with foil for effortless cleanup after the sticky glaze.
Salmon is perfectly cooked at 125°F internal — it will feel slightly firm but still have a gentle give.
To make cleanup even easier, line your pan with parchment paper or aluminum foil before cooking. This recipe is designed to cook everything in one pan, so you'll only have one pot to wash!
