Preheat oven to 400°F (200°C).
Spread potatoes and carrots on a large sheet pan. Drizzle with 2 tbsp olive oil, season with salt and pepper. Roast for 20 minutes.
Mix lemon juice, lemon zest, garlic, thyme, mustard and remaining olive oil.
Add asparagus to the pan, arrange ham slices around the vegetables. Drizzle everything with lemon-herb glaze.
Roast another 18-20 minutes until ham is caramelized at edges and asparagus is bright green and tender.
Serve immediately straight from the pan.
Let the ham sit at room temperature for 10 minutes before roasting.
For extra caramelization, brush ham with a little honey before glazing.
