Preheat oven to 400°F (200°C). Line a baking sheet with foil and lightly grease.
Pat salmon fillets dry. Mix Dijon mustard and mayonnaise in a small bowl, then brush the top of each fillet with the mixture.
In a bowl, combine panko, parmesan, melted butter, garlic, dill, lemon zest, salt, and pepper.
Press the panko mixture firmly onto the top of each salmon fillet.
Place crusted salmon on the prepared baking sheet.
Bake for 12-15 minutes until salmon is cooked through and the crust is golden brown.
Turn the broiler on for the last 1-2 minutes to really crisp up the crust - watch closely so it doesn't burn.
Remove from oven. Let rest for 2 minutes.
Garnish with fresh dill and serve with lemon wedges.
Press the panko mixture firmly onto the salmon so it adheres during baking.
Bake at 400°F for crispy crust - lower temps won't get the same golden crunch.
Serve with lemon wedges and fresh dill for a bright finishing touch.
