Ingredients

  • 1 lb Italian sausages (sweet and/or hot)
  • 2 bell peppers (mix of red, yellow, and green), sliced into strips
  • 1 large yellow onion, sliced into half-moons
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup chicken broth
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp tomato paste
  • 2 tbsp extra virgin olive oil
  • 1 tbsp butter
  • 1/2 tsp sea salt (adjust to taste)
  • 1/4 tsp black pepper, freshly ground
  • Fresh basil for garnish
  • Parmesan cheese for serving
  • Crusty bread or pasta for serving

Instructions

    Prick sausages all over with a fork to prevent bursting. Season lightly with salt and pepper.

    Heat olive oil in a large skillet over medium-high heat. Add sausages and cook for 5-6 minutes, turning occasionally, until browned on all sides. Transfer to a plate.

    In the same pan, add butter and sliced onions. Cook for 3 minutes until softened and slightly golden.

    Add bell peppers to the pan. Cook for 5-6 minutes, stirring occasionally, until peppers are tender and have nice charred edges.

    Add garlic and cook for 1 minute until fragrant. Add tomato paste and stir to combine, cooking for 1 minute.

    Pour in diced tomatoes and chicken broth. Add Italian seasoning and red pepper flakes. Stir everything together.

    Return sausages to the pan, nestling them into the sauce. Spoon some sauce over the sausages.
