Ingredients

  • 1 lb smoked sausage (andouille or kielbasa), sliced into coins
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 4 cups fresh spinach
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp Italian seasoning
  • 1/4 tsp red pepper flakes
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

    Heat olive oil in a large skillet over medium-high heat.

    Add sliced sausage and cook for 3-4 minutes until browned on both sides. Transfer to a plate.

    Add onion to the pan and sauté for 3 minutes until softened.
