Ingredients

  • 1 lb ground beef
  • 1 cup uncooked white rice
  • 1 can (15 oz) black beans, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded lettuce
  • 1 tomato, diced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Sour cream for serving

Instructions

  1. 1

Brown ground beef in a large skillet over medium-high heat, breaking it up as it cooks. Season with taco seasoning.

  2. 2

Once browned, add rice and stir to coat in the seasoned beef.

  3. 3

Add black beans, diced tomatoes, and chicken broth. Stir to combine.

  4. 4

Bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes until rice is tender and liquid is absorbed.

  5. 5

Remove from heat. Top with shredded cheese.

  6. 6

Cover and let sit for 3-4 minutes until cheese is melted and bubbly.

  7. 7

Top with shredded lettuce, diced tomato, and fresh cilantro.

  8. 8

Serve with sour cream on the side.
